Mango Strawberry Cake

My fruit cakes are getting prettier! This was a random order which I shouldn't have accepted because I'm currently overwhelmed by work and life. But I think I lack the hormone which allows me to reject baking. So yes, despite proudly announcing that finally I have a weekend free from baking, I proved myself wrong again.

Do I regret doing this cake? Nah, never. Interesting thought by my friends: to turn the center strawberry upside down. Perhaps it'll look nicer.

Times are tough, stress is high, but thou shall not cry.

Mango Nut Cake

I thought a mango cake would taste nice. But contrary to what my tastebuds believed, mango actually tastes like something else altogether when baked. And that is.... GINGER.

Seriously?! Yup, unbelievable. So this cake wasn't good tasting. Edible but not nice. Wasted my almonds and hazelnuts and one whole mango. Let's just... try again, shall we? :)

Mango Strawberry Fruit Cake

Perry ordered a cake from me. Fruit cake for a friend's surprise birthday celebration. So there goes Saturday perfecting the slices of the cake. Mango mousse on the inside, yummy food. Makes a happy birthday happier. So we met for dinner at botanical gardens, a little far but still rather nice place at Food for Thought.

Oh boy, was the birthday girl surprised! When her dear primary school friends appeared, and told her that she just baked her own birthday cake! Ingenious much?

Could never have guessed it in a million years. Or rather in 4 years. It's been a great leap year. Shall leave this with a quote: 

Friends are like wine, the longer you keep them, the better they get. Let's see how many decades we go after this first one :) Much love my dear primary school friends!

Mango Mousse Cake

This cake gave me loads of problems! I should've known better, the fatigue was so strong... And I wasn't meant to do this cake. The distraction was too strong. In any case though, I did manage to save it but unfortunately, in my zest, it MELTED.

It was so horrifying, like a black mark in my history. But now I know. Should've let the gelatin set first. Keep it refrigerated. Then sell it. In this order, because otherwise I will let someone down. That's terrible, it's called losing faith. Once faith is lost, a customer is lost. :(

Shall not show the melted cake picture. It breaks my heart. Though I know I shouldn't be such a perfectionist. Here's a promise I'll make to myself: this year, I'm going to be emotionally stronger.

Mango Mousse Cake - Limei's Birthday Cake

It's limei's birthday so I baked her a mango mousse cake! (Mango is the national fruit of phillipines, her 2nd hometown. :D) Happy Birthday Dance Goddess!





Here's the cake. Wasn't what I had in mind though, was planning on a striped mango mousse cake but in the end the stripes didn't work so I had to improvise with chocolate. Now it looks like a dog bowl. But hey, at least now I know how to make a cake that looks like a dog bowl!

The layers were really neat though! So pretty. I learnt my lesson from my banana chocolate cake and hence, big thanks to the cake ring. And I've been working quite a lot with gelatine recently, so now I'm quite confident using it. So glad, cause it does make beautiful cakes.

The cake tasted much better than i thought it would. So good! Definitely makes my A-list. Limei says, "it was the best mango cake ever... seriously heavenly mango goodness and the best sponge cake I have eaten. Priceless cakes on my birthday is enough to keep me happy every year :)"

These friends are priceless. I can't even describe how lucky I feel to be able to make you guys smile like that. I'll make cakes; we'll make memories. Love ya'll :)

Mango Cake

This was really last minute. Who would expect that I'll need to bake a birthday cake in the midst of intense mugging? Then again, who would expect North Korea to let in 7 goals for Portugal? Sadly, supplies are running low in the fridge, hence this was the best I could come up with in an hour.

It is really untidy. But it tasted pretty good. I made my own custard! However, I ran out of sugar and basic ingredients, so there was not enough custard. Which probably explained its sloppy appearance.

Sorry it's such a messy cake perry! But still, happy birthday, and I'm so happy to see everyone finish it up in 10 minutes. It really makes the stress worth it. What would I be without my dear primary school friends?
